My cuisine is defined by local and responsible produce. It is also food for sharing, built around seasonal produce that stands out in every dish. As part of my desire to pass on my expertise, I work with small-scale producers that I know in the Paris area and sometimes elsewhere in France. This allows me to pick the best ingredients and to encourage the development of the local economy and local distribution networks.

This is a place to meet with your nearest and dearest for lunch, to catch up, laugh at an anecdote and exchange tips for where to go in town. So I am here to create a wonderful backdrop that sparks discussion, like a nest perched on the “Iron Lady”. Dining is a time for seduction, for celebration or for living a dream in intimacy. It’s a time when I dim the lights to let the boulevards shine out, offering you a gentle and refined moment.

You can cast your eyes down to the Seine, the lively Place du Trocadéro and the Bois de Boulogne Forest as the sun sets. In the distance, the skyscrapers of La Défense business district glisten like an invitation to the future. Look out dreamers who may get lost in the skylines...

The Cœur Brasserie is my very own heart and you are what makes it beat. For me it is all about the moments of happiness and treating yourself, the warm feeling that comes from sharing. You can make the most of time with your friends and family in this lively and stimulating atmosphere. I also offer you an entirely different spectacle: the inner workings of the “Iron Lady”! In the day, architecture fans can admire at close range this revolutionary framework to which I feel so close. When the night falls, the Tower’s illumination is a spectacle for the eyes, you will see it sparkle more brightly than ever.
