CUISINE BY ALAIN SOULARD

From the Relais de Mougins to the Relais du Parc in Paris, by way of the Morot Gaudry and... the Jules Verne, Alain Soulard returns to the Tower.

One of the few chefs from Ducasse’s team not to have studied under the master, Alain Soulard was at the Relais du Parc when Alain Ducasse became culinary consultant. Ducasse made Soulard executive chef in charge of food services for the hotel.
In particular, he was responsible for banquets: "I supervised seminars for 10 to 350 participants. My work consisted in preserving the spirit of Alain Ducasse’s cuisine even when the volumes were very large."

An experience that would be very useful in orchestrating the 2-pronged cuisine at 58 Tour Eiffel. An irony of numbers: he designed the cuisine at 59 Poincaré.

We recommend you to arrive 30 minutes before your reservation at the restaurant booth (between the north and east pillars, near the BNP Paribas cash machine) to take your lift ticket which gives priority access to the 1st floor of the Eiffel Tower.
