CHEF THIERRY MARX


Thierry Marx is a gastronomic explorer. From molecular cuisine to street food, his cuisine is inspired as much by French gastronomic history as by his own scientific research and passion for Asia.  With his two Michelin stars in 2012 awarded to restaurant Sur Mesure by Thierry Marx at the Mandarin Oriental Paris, he pursues his urge to transmit.  Thierry Marx is also a man committed to his craft Compagnon du Devoir in patisserie, founder of Cuisine Mode d'Emploi(s) in Paris in 2012, a French network of centres for reintegration and training in catering professions.
In 2017, Thierry Marx worked on creating waste-free recipes for space for French astronaut Thomas Pesquet. Today, the chef continues to work towards environmental improvement and product transparency.

The vibrancy is worthy of a ballet, the pace controlled, the dishes made from scratch. The brasserie delivers a healthy, simple and responsible menu. No chequered tablecloths but an epic view of Paris, in its modern guise.  The chef showcases nature with seasonal products sourced from local Ile-de-France producers and sublimates them in keeping with a cosy and contemporary brasserie.
